Tiny specks of sourness blast through the air as the blade scratches the thick skin. Yellow gives way to the white below, one step closer to the juicy treasure that is kept below. Round and round, the little knife works its way until all the skin is removed, the crown jewel for the cocktail glass that awaits to be filled. With careful moves, the bartender cuts the lemon in half and harvests the precious liquid, experienced fingers applying the exact amount of pressure needed. The smell fills the air, its sour, toxic, full of angry energy that it has been awaken. Splashing sounds as it is poured into the mixer, accompanied by other colourful liquids with a personality of their own. The lid seals and a few confident moves give life to a new amagalm of flavour.
