Black cod blood, thick and cold
Sweet and cloying smell
Ocean wind blowing, blowing against
The set of the boots on the deck.

Black cod strung out on the long line
Hooks every twelve feet
Strung out with squid, return with fish
A circle of the ocean.

Knife jabs behind the gill
An artery of thickening blood
Bleed on the deck, a mess of fish
Bleed for a cleaner flavor.

No dolphins around for the dirty job
Just men braced on the deck
Roll of the boat, push of the wind
The blood and scales and mess.

But return to port, fish iced in the hold
Deck washed and scrubbed clean
Return to port, a dolphin escort
Darts in and through the bow wave.
