Warm, dripping fat rolls off the pig and drips into the ashes as the pig slowly spins and roasts over the wood fire. The pig’s skin was once soft and pink, but now it is mottled in scarlet and masonry brick red. We take turns turning the spit ceremoniously, and a great smile comes across the face of all the chefs. A connection to primordial self, or maybe laughing in the rare absurdity of cooking a whole pig. Wood smoke obscures the scent of the pig with its sweet acrid scent, but if you are close enough you catch a whiff of meat, like bacon but sweeter. The wood crackles.
